Food Victory!

Today was a big day for Cole and for me!

First of all, two days ago I made Trimtastic Chocolate Zucchini Cake from Trim Healthy Mama’s cookbook. It is gluten free and sweetened with a Xylitol, Erythritol, Stevia blend. The cake turned out moist and delicious and Cole loved it! So, this morning before church, anticipating the regular “sour cream n’ onion chips” debate, I decided to be ahead of the game. I got Cole’s pocket size Boogie Board and wrote, “First church, then chocolate cake.” Cole put the schedule in his pocket and hasn’t mentioned chips ALL day!!! After church, he showed me the schedule and said, “chocolate cake” which I happily made with the same fantastic results! I am SO excited about finding an acceptable and healthy alternative for Cole.

Secondly, I roasted a chicken for dinner. Usually, Cole will skip the veggies and eat some chicken with mashed potatoes; no gravy of course. Today I decided not to make potatoes and go with a THM alternative of Mashed Fotatoes instead, which are a delicious puree of Cauliflower, cream, butter and parmesan cheese. I put it on Cole’s plate just like usual and swore the rest of the kids to secrecy. As Cole ate his chicken, he sniffed the fotatoes  a few times. Then, the moment when he took his first bite……shocked expression, a hint of inner pain and he swallowed!!! Resisting the urge to cheer, I waited for Cole to respond. He wrinkled his nose and pushed his plate away. At that point I said, “one more bite, then chocolate cake. His next bite was rather small and he swallowed without wasting an extra moment with the new flavour in his mouth. Yippee!! He tried a completely new vegetable! Tonight I am one happy mama.
